Peanut Butter Plantain Vegan Toast

This vegan toast is sweet, creamy, crunchy, and savory — all packed into one bite. It's made with caramelized plantains, natural peanut butter, souped up coconut yogurt and finished with a sprinkle of shredded coconut. Simple and addictive. I literally had to make a second one — it was that good. If you’re looking for a new go-to plant-based breakfast or snack, this one’s for you. Ingredients:
1–2 slices of sourdough (or your favorite bread)
Peanut Butter (100% natural, no added sugar or oils)
1 ripe plantain (yellow with black spots)
Coconut oil or neutral oil (for frying)
Coconut yogurt (unsweetened)
1 tsp cacao
½ tsp maca powder
Pinch of cinnamon
1–2 tsp maple syrup (to taste)
Shredded coconut (garnish)
Instructions:
1. Fry the plantains.
Peel and slice your plantain diagonally for longer, elegant slices. Heat a bit of oil in a skillet over medium heat and fry plantains until golden brown and caramelized — about 2–3 minutes per side.
2. Toast your bread.
Crisp it up — sourdough works great, but gluten-free bread also holds up beautifully.
3. Make your souped up coconut yogurt.
In a small bowl, mix coconut yogurt with cacao, maca, cinnamon, and maple syrup until smooth. Taste and adjust to your preference — more maple if you like it sweeter.
4. Layer it.
Spread peanut butter on toasted bread, layer on the fried plantains, and drizzle generously with your souped up yogurt mix. Garnish with shredded coconut if desired.
Customize It
Different nut butter? Almond, sunflower, or cashew butter work great too.
No maca? Leave it out or swap in extra cinnamon.
Need it nut-free? Use sunflower seed butter.
